To complete the experience and balance every bite, the meats are accompanied by Japanese mushrooms, pickles, fresh lettuce (sanchu), crispy nori seaweed, Japanese sauces, and rice with cured egg yolk.

The sake brewery’s unique brewing method called “Hybrid” is used to create sake with stable acidity by adding “raw lactic acid bacteria” collected beforehand. We use “specially grown rice” which uses less pesticides and fertilizers, and the variety is “Hattanso”, an ancient variety that this brewery has grown independently. This sake looks like a white wine from a special field in great Burgundy.
