Wagyu beef is probably one of the most coveted meats and is the only one served in Rokuseki. “Wa” means Japan and “gyu” means cow. In other words, “Genuine Japanese beef” would be the most adequate definition of Wagyu. The pride of the Land of the Rising Sun, this meat has a legendary aura from the day it is bred to its sacrifice. Only one thing is certain: The purity of the Tajima black cattle breed and the singular qualities that make it so unique are the fruit of a country secluded until the 19th century.
Wagyu meat is also the result of a love for nature characteristic to Japanese gastronomy. A philosophy that translates into the infinite care, sacrifice, patience, ambition and pleasure we assert when cooking in Rokuseki. The reward is a meat that creates a thrill only comparable to the emotion one can feel towards Iberian ham.
